When you travel through the High Black Forest, you probably think of tarte flambée and Black Forest cake first. All the better that right in the centre of Hinterzarten there is an alternative that is light, fresh and full of flavour: at AN Vietnamese Kitchen & Sushi, Freiburger Straße 26, we cook Vietnamese classics and prepare sushi fresh. In this post we explain what makes Vietnamese cuisine special and which dishes are a great choice for your first visit.
What makes Vietnamese cuisine special
Vietnamese cooking is all about balance. Salty, sweet, sour, spicy and fresh should complement each other on the plate without one flavour taking over. Typical elements are:
- Fresh herbs such as coriander, mint and Thai basil
- Rice noodles and rice instead of heavy side dishes
- Lemongrass, lime and ginger for freshness
- Fish sauce as a savoury base – the allergens of each dish are listed in its description on our menu
- Short cooking times in the wok, so vegetables stay crisp
The result: dishes that fill you up without weighing you down – ideal after a day outdoors.
Our recommendations for your first visit
Pho bo – the noodle soup from Hanoi
Pho is Vietnam's most famous dish: a clear, aromatic broth with flat rice noodles, beef and fresh herbs. If you don't eat beef, choose pho ga with chicken or pho with tofu. Read more in our post Pho bo explained.
Bun bo nam bo – the lukewarm rice noodle bowl
Stir-fried beef with lemongrass on rice noodles, with salad, herbs, fried onions, peanuts, a spring roll and fish-lime sauce. Mix everything before eating – every bite gets something crunchy, savoury and fresh.
Goi xoai – mango salad with prawns
A light starter to share: fresh mango strips, prawns, exotic herbs and a homemade dressing.
Bo la lot – beef in betel leaves
A speciality from southern Vietnam: beef wrapped in fragrant betel leaves, served with fish sauce.
For food lovers: duck and curries
Crispy duck with mango sweet-and-sour sauce (vit mango) or a red curry with coconut curry cream, lemongrass and lime leaves – mildly spicy and served with rice.
Vietnamese and sushi at the same table
At AN you don't have to choose. Many guests order a pho or a bun bowl and share a few sushi rolls. Classic maki, inside-out rolls with cream cheese or deep-fried crunchy rolls – our post Sushi in Hinterzarten: the types explained gives you an overview.
Perfect after a hike, a ski day or an afternoon at Lake Titisee
Hinterzarten is a popular starting point for walks through the Ravenna Gorge, trips up the Feldberg or a day at Lake Titisee. After a day like that, a hot pho is exactly right. In winter it warms you up; in summer a fresh salad or a lukewarm bun bowl is the lighter choice. We are open for lunch and dinner on weekdays and all day at the weekend – see contact & opening hours for the exact times.
