Hardly any dish represents Vietnam as much as pho. In Hanoi the noodle soup is traditionally eaten for breakfast, and today it is loved all over the world. At AN Vietnamese Kitchen & Sushi in Hinterzarten, pho bo is one of the dishes we recommend most. Time to take a closer look at this soup.

Where does pho come from?

Pho was created at the beginning of the 20th century in northern Vietnam, around Hanoi and Nam Dinh province. Hanoi-style pho is known for its clear, delicately spiced broth. In the south, for example in Saigon, pho is often a little sweeter and served with more herbs and sauces on the table. That's why the section on our menu is called “Pho Hanoi” – named after the soup's home.

What goes into a good pho?

The broth

The heart of every pho is its broth. Traditionally, beef bones are simmered for many hours so the broth stays clear but tastes rich. Charred onion and ginger plus spices such as star anise and cinnamon give it its typical warm aroma.

The noodles

Pho is served with flat rice noodles. They are made from rice flour, soft in texture and soak up the broth nicely.

The toppings

The classic is beef – hence the name pho bo (“bo” means beef). Pho ga is made with chicken. On our menu you'll also find pho with tofu and curry versions, for example with duck (Pho Curry Vit) or crispy chicken.

Herbs and seasoning

Fresh herbs, spring onions, lime and chilli complete the soup. With them, every guest can adjust the pho to their own taste.

How to eat pho properly

  1. Taste first: try the broth on its own – that's the best way to taste its spices.
  2. Season to taste: a squeeze of lime adds freshness, chilli adds heat. Use sauces sparingly so they don't overpower the broth.
  3. Chopsticks and spoon: pick up noodles and meat with the chopsticks and the broth with the spoon. Place some noodles on the spoon and add a little broth – that way the bite cools down.
  4. Slurping is allowed: in Vietnam it's perfectly normal and helps you enjoy the hot soup.
  5. Don't wait too long: pho tastes best hot, while the noodles still have some bite.
