Sushi has long been more than a trend – in the High Black Forest, too. At AN Vietnamese Kitchen & Sushi in Hinterzarten we prepare sushi fresh, from classic nigiri to modern fusion rolls. But what is the difference between maki and inside-out, and what exactly is a crunchy roll? Here is your little sushi guide.

The main types of sushi

Nigiri – topping on rice

A hand-formed ball of rice topped with a slice of fish or another topping. Nigiri are the purest way to enjoy sushi. We serve them in pairs, for example with salmon (sake), eel (unagi), prawn (ebi), scallop (hotategai) – also flambéed – or with avocado.

Maki – the classic roll

With maki the nori sheet is on the outside, with rice and usually a single filling inside. The small rolls (6 pieces) are perfect for trying: cucumber (kappa), avocado, salmon or eel.

Inside-out – rice on the outside

Here it's the other way round: the rice is on the outside, often with sesame, and the nori is inside. Inside-out rolls usually have several fillings – for example salmon, mango and cream cheese in our Salmon Philadelphia.

Sashimi – no rice at all

Sashimi are thin slices of raw fish served on their own. If you love the pure taste of salmon (sake) or tuna (maguro), this is for you.

Crunchy rolls – crispy outside

Crunchy rolls are deep-fried: crispy on the outside, creamy with cream cheese inside. A good choice if you are not keen on raw fish – they are also available with chicken, for example.

AN special rolls and fusion sushi

Our large rolls (8 pieces) combine tradition and creativity: the Smoked Salmon with flambéed salmon, the Rainbow Roll with salmon, tuna, prawns and avocado, or the Mango Roll wrapped in mango.

Sushi don – sushi in a bowl

Prefer a bowl? With sushi don the ingredients sit on sushi rice – the Unagi Sushi Don, for example, comes with grilled freshwater eel, avocado and unagi sauce.

How to put together your sushi selection

  • Lunch for one: a sushi set, such as Menü 1 with salmon nigiri, salmon maki and two kinds of inside-out rolls
  • For two: one special roll to share plus a portion of maki or nigiri each
  • For sushi beginners: crunchy rolls, the Chicken Teriyaki set or avocado maki
  • Without fish: the Menü Vegi with avocado, cucumber, avocado Philadelphia and edamame maki
  • Combined with Vietnamese food: a small sushi selection as a starter, followed by a pho

Enjoying sushi – five tips

  1. Dip nigiri into soy sauce topping-side down, not rice-side – that way it doesn't fall apart.
  2. Use wasabi sparingly: it should season, not overpower.
  3. Pickled ginger is meant to cleanse your palate between different kinds.
  4. Start with mild varieties and finish with bolder ones like eel or flambéed salmon.
  5. Chopsticks or fingers – both are fine for sushi.
